Simple Banana Bread/Muffins

I found this recipe a while ago when I found that all recipes for banana bread call for fancy stuff: sour cream, buttermilk, unicorn dander.  I just wanted a simple quick bread to use some bananas that were getting increasingly unattractive looking! You can scale the sugar a little bit - I’ve cut it way back from the original I found.

  • 3 or 4 mashed bananas
  • 1/4 C butter, softened
  • 2/3 C sugar: 1/3 C white, 1/3 C brown
  • 1 egg
  • scant tsp vanilla
  • 1 1/2 C flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • half bag of chocolate chips (about 1 C); or nuts; or raisins; or blueberries


Preheat oven to 350.

Cream butter and sugar.  Add bananas, egg, and vanilla.  Mix in dry ingredients, being careful not to overbeat.

Bake in 2 loaf pans for about 40 minutes; or 12 muffin cups for about 20 minutes — until tester comes out clean.
